Cadbury Egg Brownie Cookies

Celebrate Easter with these rich and fudgy Cadbury egg brownie cookies! The chocolate cookies are loaded with Cadbury eggs to make the perfect Easter treat.

Ingredients
  

  • ¾ plus 1 tablespoon all-purpose flour
  • ¼ cup cocoa powder
  • ½ teaspoon espresso powder
  • 1 tsp baking soda
  • ½ teaspoon salt
  • 2 eggs
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 tablespoon canola oil
  • 1 tsp vanilla extract
  • 5 tablespoon melted butter
  • 8 oz chocolate
  • 1 cup Cadbury eggs, plus more for sprinkling

Instructions
 

  • Preheat the oven to 350 and prepare a cookie sheet. Set to the side.
  • In a medium-sized bowl, combine the flour, cocoa powder, espresso powder, baking soda, and salt. Set to the set.
  • Melt the butter and pour it over the chocolate. Stir the mixture until fully combined and smooth. Set to the side.
  • In a large bowl with a hand mixer or in a stand mixer with a paddle attachment, mix the eggs and the sugar until double in size. When doubled, add in the oil and vanilla.
  • Add the chocolate mixture to the wet ingredients, followed by the dry ingredients. Fold in the chocolate eggs.
  • Chill the cookie dough in the refrigerator for 30 minutes.
  • Form the cookie dough balls and place on the cookie sheet. Top the cookie dough balls with the extra chocolate eggs. Bake the cookies in the oven for 8-12 minutes.
  • Let the cookies cool on the cookie sheet and move to a cooling rack to continue cooling.
