Buckwheat Banana Bread

Lighten up your traditional banana bread with this version of buckwheat banana bread. The grainy flour gives the bread a hearty taste but still keeps the classic flavor.

Ingredients
  

  • ¼ cup maple syrup
  • 2 large eggs
  • 1 cup mashed bananas (about 2 bananas)
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 1 cup buckwheat flour
  • ½ cup all-purpose flour
  • ¾ tsp baking soda
  • ½ cup canola oil
  • 1 cup semi-sweet or dark chocolate chips (optional)

Method
 

  1. Preheat the oven to 350 and prepare a loaf pan with parchment or grease. Set to the side.
  2. In a large bowl, mash the bananas. Once they are mashed, add in the maple syrup, eggs, sour cream, and vanilla.
  3. Mix the salt, buckwheat flour, AP flour, and baking soda into the banana mixture. Continue mixing until everything is combined.
  4. Fold in the oil and make sure everything is fully mixed together.
  5. If adding chocolate chips, fold them into the batter.
  6. Pour the batter into the prepared pan and place in the oven. Bake the buckwheat banana bread for 50-60 minutes, or until a toothpick comes out clean.
  7. Let the banana bread cool in the pan until ready to serve.
