Chocolate Peppermint Cookies

Chocolate peppermint cookies with peppermint chunk baking chips might just be the perfect Christmas cookie. The chocolate cookie has the best balance of gooey chocolate and peppermint flavor to make it a cookie that melts in your mouth.

Ingredients
  

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • tsp baking soda
  • 1 stick, 8 tablespoon unsalted butter, softened
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla
  • ½ cup cocoa powder
  • 1 package Andes Peppermint Baking Chips

Method
 

  1. Preheat the oven to 350 and prepare a cookie sheet with parchment paper. Set to the side.
  2. Mix the flour, baking powder, salt, and baking soda together in a bowl and combine. Set to the side.
  3. In a medium-sized bowl with a hand mixer or in the bowl of a stand mixer with a paddle attachment, cream the butter with the sugars, for about 2-3 minutes until light and fluffy. Add the egg and the vanilla in, mixing completely and scraping down the bowl as needed.
  4. Add the dry ingredients to the butter mixture. Alternate adding in the flour mixture and the cocoa powder. Add the peppermint chips to the dough and mix to combine.
  5. Scoop the cookie dough on to the parchment paper using a cookie scoop and bake the cookies for 8-10 minutes. The cookies will have a firm edge when ready. Let the cookies cool on cooling rack for about 10 minutes when done.
