Raspberry Marble Cookies

These raspberry marble cookies combine juicy raspberries with a soft, chewy marble cookie full of chocolate chips for a mouthwatering bite.

Ingredients
  

  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ¾ cup butter, melted
  • ¾ cup brown sugar
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 2 tablespoons cocoa powder
  • 1 cup frozen raspberries
  • 1 cup semi-sweet chocolate chips

Method
 

  1. Preheat the oven to 350 and prepare a cookie sheet with parchment paper. Set to the side
  2. Combine the flour, baking soda, and salt in a small bowl. Set to the side.
  3. Mix the melted butter, brown sugar, and granulated sugar in a large bowl until smooth. Then, add in the eggs, followed by the vanilla. Mix until smooth.
  4. Add the flour mixture with the butter mixture, using a whisk to measure until smooth.
  5. Remove about a quarter of the dough and place it in a small bowl with the cocoa powder. Use a rubber spatula to fold the cocoa powder into the dough.
  6. Add the chocolate cookie dough back to the large bowl, along with the chocolate chips and the frozen raspberries. Use a rubber spatula to fold everything in.
  7. Use a cookie dough scoop to scoop out the batter. Place the cookie dough balls on the prepared sheet, about 6 cookies at a time. Bake the cookies for about 10 minutes, until the edges are firm. Repeat with the remaining dough.
  8. Let the cookies slightly cool on the cookie sheet before moving to a cooling rack.
