This strawberry rhubarb banana bread turns banana bread into a seasonal favorite. It takes everything you love about buttery and moist banana bread and adds sweet strawberries and tart rhubarb to the mix.

Ingredients
  

  • 1 ½ cup mashed bananas (about 3 bananas)
  • 2 large eggs
  • cup oil
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • cup sour cream
  • 1 ½ tsp vanilla
  • 1 ¾ cups all-purpose flour
  • 2 tsp baking soda
  • ½ tsp salt
  • 1 cup strawberries, chopped
  • ½ cup rhubarb, chopped

Method
 

  1. Preheat the oven to 350 and prepare a loaf pan with parchment and grease. Set to the side.
  2. In a large bowl, mash the bananas until they are smooth and mushy. Then, add in the eggs, oil, sugars, sour cream, and vanilla. Use a whisk to mix everything together.
  3. Add in the flour, baking soda, and salt. Mix with the whisk until everything is combined.
  4. Add in the chopped strawberries and rhubarb. Use a whisk or rubber spatula to mix the fruit into the batter thoroughly.
  5. Pour the cake batter into the prepared pan and bake the cake in the oven for 55-60 minutes. It is a dense cake, so it might take longer in the oven. When the cake is done, a toothpick should run clean from the batter.
  6. Let the cake cool fully in the pan on a cooling rack before slicing. When the cake is cool, slice the cake and serve.
