Apple Oatmeal Cookies

These sweet apple oatmeal cookies are loaded with apples, rolled oats, and warming spices, perfect for a fall treat. The thin cookies are going to be your favorite seasonal treat.

Ingredients
  

  • 1 ¾ cup all purpose flour
  • ¾ teaspoon baking soda
  • ½ tsp salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ tsp cloves
  • ¼ teaspoon nutmeg
  • 1 ½ sticks (12 tbsp) softened butter
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cup rolled oats
  • ¾ cup apples, peeled and roughly chopped

Method
 

  1. Preheat the oven to 350 and prepare a cookie sheet with parchment paper. Set to the side.
  2. Mix together the flour, baking soda, salt, and spice in a medium-sized bowl. Set to the side.
  3. In a large bowl with a hand mixer or in the bowl of a stand mixer with a paddle attachment, cream the butter for 1-2 minutes. Scrape down the sides of the bowl and add in the sugar. Cream the butter with the sugar until light and fluffy, about 2-3 minutes. Then, add in the egg and vanilla, scraping down the sides of the bowl as needed.
  4. Add the dry ingreidents to the butter mixture in two incriments, scraping down the sides of the bowl as needed.
  5. Add the rolled oats and apples, making sure they are distributed evenly throughout the dough.
  6. Use a cookie dough scoop to scoop the dough. Place 6-8 balls of the cookie dough on the prepared baking sheet and place in the oven. Bake the cookies for 8-10 minutes, until the edges are set.
  7. Take the cookies out of the oven and let them cool on the cookie sheet before moving them to a cooling rack. The cookies may spread in the oven. If they do, use a round cookie cutter and place it around the outside of the cookie. Swirl the cookie cutter in a round motion around the outside of the cookie to form it back into a circle.
