    Rice Krispie Ice Cream Sandwiches

    These Rice Krispie ice cream sandwiches take your favorite flavor of ice cream and sandwich it between two gooey Rice Krispie treats. It's the upgrade to the classic summertime dessert you never knew you needed.

They ditch the classic cookie base of the sandwich and swap in a marshmallow rice krispie treat. What results is a summertime treat that has a little bit of everything.

    Let's be real—sometimes, in the summer, it is way too hot to turn on the oven. That's where these ice cream sandwiches come into play. They are no-bake and don't require much fuss in the kitchen. The hardest part about this recipe is having the patience to wait while they firm up in the freezer.

    One of the best parts about these summer Rice Krispie ice cream sandwiches is that you can put whatever flavor of ice cream you want inside. Chocolate, coffee, strawberry, or plain old vanilla make excellent combinations. You can even take the sandwiches to the next level by rolling them in mini chocolate chips or sprinkles.

    The trick to getting the right size scoop of ice cream in the sandwich is to use a pint-size container and slice it up like a loaf of bread.     • Rice Krispie Treat Cereal - Any brand of the puffed rice cereal will work.
    • Butter - The butter helps melt down the marshmallows.
    • Marshmallows - Use regular-size marshmallows and not mini.
    • Ice Cream - Use ice cream in a pint-size container for easy assembly.
    • Toppings - Toppings are optional, but mini chocolate chips and sprinkles are always a good addition.

    Directions For How To Make Rice Krispie Ice Cream Sandwiches

    1. Prepare.

      Prepare a cookie sheet with parchment paper and set it to the side.

    2. Make the rice krispie treats.

      In a large saucepan, melt the butter and marshmallows together. When the marshmallows are fully melted and look soupy, add in the puffed cereal. Mix until the marshmallows are fully combined.

    3. Form the Rice Krispie treats.

      Pour the Rice Krispie treats onto the prepared cookie sheet. Use a rubber spatula coated in cooking spray (this will allow it not to stick to the spatula) to flatten the treats. Let them sit to firm up for about 15 minutes.

    4. Prepare the ice cream.

      While the Rice Krispie treats set, take the ice cream out of the freezer to thaw slightly. After a few minutes, use a serrated knife to cut the ice cream pints into small circles.

    5. Assemble the ice cream sandwich.

      Use a round cookie cutter to cut a circle out of the cookie sheet of Rice Krispies. Top the treat with ice cream, followed by another Rice Krispie treat. Repeat until there are no more Rice Krispies.

    The Rice Krispie ice cream sandwiches are excellent for dessert for a barbeque, a refreshing summertime afternoon treat, or just dessert any night of the week. Add mini chocolate chips or sprinkle on the ice cream to take the dessert up a notch.

    Make Ahead and Storage

    The Rice Krispie ice cream sandwiches can easily be made ahead of time and kept in the freezer until ready to eat. The treats can also be made and left out covered overnight if you don't want to assemble them until the next day.

    Freeze any extra or leftover ice cream sandwiches in a plastic bag or airtight container. The assembled Rice Krispie ice cream sandwiches will last 2-3 months in the freezer.

    • 6 cups Rice Krispie Treat Cereal
    • 3 tablespoon unsalted butter
    • 1 package regular sized marshmallows
    • 2-3 pints ice cream of your ice

    Method
     

    1. Prepare a cookie sheet with parchment paper. Set to the side.
    2. In a large saucepan, melt the butter with the marshmallows. When the marshmallows look soupy, add the Rice Krispies treats. Mix the marshmallows and cereal together until fully combined.
    3. Pour the cereal and marshmallow mixture onto the prepared sheet pan. Using a rubber spatula (spray it with cooking spray so the marshmallows won't stick to it), flatten the Rice Krispie treats on the cookie sheets. Let the cereal treats set at room temperature for 15 minutes.
    4. While the Rice Krispie treats are setting, take the ice cream out of the freezer to thaw slightly. Then, turn the ice cream container on its side and slice it into round pieces. Each pint should yield about 3-4 slices of ice cream.
    5. Assemble the ice cream sandwich. Use a round cookie cutter to cut a circle from the Rice Krispie treats cookie sheet. Top the treat with ice cream, followed by another Rice Krispie treat. Repeat until there are no more Rice Krispie treats left. Roll the ice cream in mini chocolate chips or sprinkles, if using.
