The cookies use a box of cake mix to add a cake batter-like flavor to the cookies and make the baking process so much easier. It's a win-win for both quick baking and flavor.

    I always like to keep a box of cake mix in my pantry. It is helpful whenever I need a quick dessert or just want to make something simple. Cake mix is a shortcut in the kitchen that is well worth taking for the right reasons. I like to use it when making cake pops or even when I need a basic cake. In this recipe, the cake mix subs in for all of the dry ingredients, making the baking process much easier.

    • Granulated Sugar - Helps build the texture of the cookies and provides a slight sweetness.

    Directions For How To Make Cake Mix Christmas Sprinkle Cookies

    1. Prepare.

      Preheat the oven to 350 and prepare a cookie sheet with parchment paper. Set to the side.

    2. Mix wet ingredients.

      Cream the butter with the sugars using a hand or stand mixer. Then, add in the egg, followed by the vanilla, scraping down the sides of the bowl as needed.

    3. Mix in dry ingredients.

      Add in the cake mix, baking soda, and salt and mix until combined.

    4. Fold in the sprinkles.

      Add in the sprinkles and fold into the batter using a rubber spatula.

    5. Bake the cookies.

      Scoop the cookie dough onto the prepared cookie sheet and bake the cookies in the oven. Bake the cookies for 10-12 minutes until the edges of the cookies are set.

    6. Cool.

      Let the cookies cool slightly on the cookie sheet before moving to a cooling rack.

    Ingredients
      

    • 12 Tablespoons, (1 ½ sticks), butter, softened
    • ¾ cup granulated sugar
    • ¼ cup brown sugar
    • 1 large egg
    • 1 ½ teaspoon vanilla extract
    • 1 box cake mix
    • 1 teaspoon baking soda
    • ½ teaspoon salt
    • ½ cup red and green sprinkles

    Instructions
     

    • Preheat the oven to 350 and prepare a cookie sheet with parchment paper. Set to the side.
    • Using a hand or stand mixer with a paddle attachment, cream the butter with the sugars until light and fluffy, about 2-3 minutes. Add in the egg, followed by the vanilla, scraping down the sides of the bowl as needed.
    • Add in the cake mix, baking soda, and salt. Mix until combined.
    • Add in the sprinkles and mix them in with a rubber spatula.
    • Scoop the cookie dough using a cookie dough scoop. Place the cookie dough balls on the prepared cookie sheet and bake the cookies in the oven for 10-12 minutes until the edges are golden brown. If desired, you can roll the cookie dough balls in sprinkles before placing them in the oven.
    • Let the cookies cool slightly on the cookie sheet before transferring them to a cooling rack to fully cool.
