Take your s'mores to the next level with this s'mores brownie pie. A thin graham cracker crust is the base layer of the rich pie filled with decadent brownies and topped with toasted marshmallows.

Gooey S'mores Brownie Pie
Summertime means s'mores are always on the menu. The one downfall of the gooey, chocolatey treat is the campfire needed to make the classic dessert. That's where this brownie s'mores pie comes into place. The brownies replace the signature piece of chocolate to replace the classic dessert, and no campfire is needed.
This s'mores brownie pie is perfect for any occasion during the summer. Like a classic s'more, it is all about the layers. It starts with a light graham cracker crust and then is filled with a layer of fudgy brownies loaded with chocolate chips. The pie finishes off with a layer of marshmallows, toasted to golden brown perfection.
The hardest part about this recipe is getting the perfect toast on the marshmallows. As you know, with s'mores, toasting marshmallows can go from golden brown to burnt in just a few seconds. I like to cut the marshmallows in half, so they lay flat on top of the brownie layer, then stick them in the oven under the broiler for about 30-60 seconds. As soon as the tops turn golden brown, I know they are the perfect texture and consistency for the pie.

Ingredients Needed For S'mores Brownie Pie
See below for all the details on what you'll need to make the full recipe.
- Graham Crackers - Crushed or whole will work. If using whole, break them down into fine crumbs.
- Cocoa Powder - The chocolate base for the brownies.
- Marshmallows - I like to use regular-sized marshmallows and cut them in half for the top layer.
- Melted Butter - The melted butter helps to bind the graham cracker layer and also goes in the brownie mix to make it rich and chewy.
- Chocolate chips - Any type of chocolate chips will work to enhance the chocolate flavor in the brownies.
Directions For How To Make S'mores Brownie Pie
- Prepare.
Preheat the oven to 350.
- Make the graham cracker crust.
If using regular graham crackers, crush them into a fine texture using a food processor or place them in a plastic bag and hit them with a rolling pin. Mix the crushed graham crackers with the sugar and melted butter. Add the mixture to the pie dish, pressing it down to cover the bottom and edges fully.
- Make the brownies.
Melt the butter and set it to the side. Then, whisk together the oil, sugars, and cooled melted butter in a large bowl. Add the eggs, followed by the vanilla. When fully mixed, add the cocoa powder, flour, salt, and espresso powder. Mix until thoroughly combined. Fold in the chocolate chips.
- Bake the pie.
Add the brownie mixture on top of the graham cracker crust and place in the oven. Bake the brownie pie for 25-30 minutes until the brownies are cracking on top.
- Toast the marshmallows.
When the brownies are done, take the pie out of the oven and arrange the marshmallows on top. Evenly distribute them so they cover the top surface of the pie. Turn the oven to broil and place the pie back in the oven. Let the marshmallows toast in the oven until golden brown, about 30 to 60 seconds.
Serving Suggestions
This brownie pie is excellent on its own. To elevate the dessert even further, you can add a scoop of ice cream on top of the pie.
Make Ahead and Storage
Because of the toasted marshmallows, the s'mores brownie pie is best served fresh. If you need to make the dessert ahead of time, make it, but wait to toast the marshmallows on top until ready to serve the pie. The brownie pie can be made 1-2 days ahead of time and kept with tin foil or plastic on top of the pie.
Extra s'mores brownie pie can be stored in an airtight container for 5-6 days. The marshmallows may become stale or moist depending on how you store the pie. They might also stick to foil or plastic. I wouldn't recommend freezing the dessert because of the marshmallows. If you want to freeze it, make the pie, freeze it without the marshmallow topping, and add it on when you are ready to eat it.
Tips and Variations
- Peanut Butter Brownies - Swap out the chocolate chips for peanut butter chocolate chips to make a peanut butter s'mores brownie pie.
- Toasting the Marshmallows - The marshmallows can burn in an instant, so don't walk away from the oven when they are toasting.
- Cutting the Pie - Let the pie cool and sit at room temperature before cutting it. If you cut it right out of the oven, it will easily fall apart. Give it some time to firm up, and it will be much easier to cut.
FAQs
Yes, marshmallow cream will also work as a topping. For a firm marshmallow topping, it is best to make a homemade marshmallow meringue frosting.
For the brownie s'mores pie, I recommend using regular-sized marshmallows. I cut them in half so they stay flat on the surface. You could use mini marshmallows if you would like. You would just need more of the mini marshmallows.
Yes! A premade graham cracker crust or boxed brownie mix will still result in a delicious s'mores brownie pie.

Corrin says
The pie is delicious but 30 minutes is not nearly enough to bake this pie in the center. Like a normal brownie mix it probably needs to be in the oven for 38 - 45 minutes. I did the recommended time and the pie was still wet when I cut into it after cooling.
