    These rich and chewy espresso blondies have a great balance of coffee and chocolate flavor. They are packed with creamy milk chocolate chips that give them the perfect mocha-like flavor.

    Simple Espresso Chip Blondies

    If you love a good hint of chocolate in your morning coffee, you are going to fall in love with these espresso chocolate chip blondies. They have a great balance of rich espresso powder and creamy milk chocolate chips to create the perfect mouthwatering bite. 

    I've been on a real blondie kick lately, and it doesn't seem to stop anytime soon. I love making blondies because they are simple desserts that take no time to make. Plus, they hold mix-ins and toppings really well, allowing the flavor combinations to switch up constantly. 

    In this week's version of the blondie, I've gone with an espresso chocolate chip variety. The blondie batter mixes with a few tablespoons of espresso powder to give it a coffee kick. The batter finishes off by folding in giant chocolate chips to make an excellent flavor combination. The result is a blondie that is rich, chewy, and deep in coffee flavor.

    Ingredients Needed For Espresso Chip Blondies

    • Melted Butter - Adds to the richness of the flavor.
    • Cornstarch - Keeps the blondies chewy.
    • Espresso Powder - A small amount to give the blondies their coffee flavor.
    • Chocolate chips - I use milk, but dark or even white chocolate chips will work.

    Directions For Making Espresso Chip Blondies

    1. Prepare.

      Preheat the oven to 350 and prepare an 8x8-inch pan with parchment and set to the side.

    2. Make the blondies.

      In a large bowl, combine the brown sugar, egg, vanilla, and salt. Whisk to combine. Add in the cooled melted butter and then the flour, cornstarch, and espresso powder. Mix until the batter is light brown in color.

    3. Add the chocolate chips.

      Fold in the chocolate chips into the blondie batter using a rubber spatula.

    4. Bake the blondies.

      Add the batter to the prepared pan and bake the blondies in the oven for 30-35 minutes. Let the blondies fully cool in the pan before cutting them.

    Serving Suggestions

    The blondies don't need much else to make an excellent dessert. However, they do level up with a scoop of ice cream nearby. You can even take two blondies and add ice cream in the middle to make a blondie ice cream sandwich.

    Make Ahead and Storage

    There is no problem if you need to make the blondies ahead of time. Make the blondies and store them in an airtight container for 1-2 days. The blondies can also be made and frozen. Bake and slice the blondies and then store them in a freezer-safe bag or airtight container where they will last for 2-3 months. 

    Tips and Variations

    • Chocolate Switch Up - Not a fan of milk chocolate? Go with dark, semi-sweet, or white chocolate chips in the batter.
    • Espresso Powder -  Don't underestimate the power of a small amount of espresso powder in the blondies. It's a secret ingredient that can elevate the flavor profile with just a small teaspoon.
    • Overcooking - The blondies can overcook quickly in the oven. Keep them in the oven until they are golden and start to pull slightly from the edge of the pan.

    FAQs

    Can I use decaf espresso in the recipe?

    Yes! The caffeine content will not impact the final outcome of the recipe.

    Can I use instant coffee instead of espresso powder?

    Espresso powder has a stronger flavor. If you are out of espresso powder and need a substitute, instant coffee will work, but the flavor will be less strong. 

    What's the difference between a blondie and a brownie?

    A blondie uses vanilla and brown sugar, while a brownie uses cocoa and chocolate. They are similar in texture but very different in taste.

    Ingredients
      

    • 10 tablespoon melted butter
    • 1 ¼ cup brown sugar
    • 1 large egg
    • 1 tsp vanilla
    • ¼ tsp salt
    • 1 cup flour
    • 1 tbsp cornstarch
    • 2 teaspoon espresso powder
    • 1 cup milk chocolate chips

    Equipment

    • Mixing bowl
    • Rubber Spatual
    • 8x8-inch pan

    Method
     

    1. Preheat the oven to 350 and prepare an 8x8-inch pan with parchment paper. Set to the side.
    2. In a large bowl, whisk together the brown sugar, egg, vanilla, and salt. Add in the cooled butter and mix until the batter is light brown in color.
    3. Fold in the flour and cornstarch. The dough is combined when it is streak-free of the dry ingredients.
    4. Mix in the chocolate chips using a rubber spatula, making sure they are distributed evenly.
    5. Add the blondie dough to the pan using a rubber spatula. Top the blondies with any extra chocolate chips.
    6. Bake in the oven for 30-35 minutes. Let the blondies cool in the pan.
