    Chewy Funfetti Blondies

    Funfetti is always a good idea. An even better idea, though? These funfetti blondies. This simple treat takes a classic blondie and loads it up with sprinkles to turn it into a funfetti dessert worth every bite. The addition of sprinkles is so simple and makes every bite so much better.

    Blondies are one of my favorite desserts to make. They are like a vanilla cousin to brownies and come together just as quickly. Because the blondie batter is very plain, it holds super well to mix-ins. You can pretty much add anything into the batter, like peanut butter or even white chocolate and cranberry. These funfetti are more of a classic choice but combine just as well in the batter.

    Taste-wise, the sprinkles don't add a whole lot of value. They are more for aesthetic value, but who doesn't want sprinkles swimming around their blondies? They really make everything better, even if they don't add a whole lot of flavor.

    Since the sprinkles are tasteless, I like to throw some white chocolate chips in them. They add a bit of sweetness to the batter and make the sprinkles pop in color!

    Ingredients Needed For Funfetti Blondies

    • Butter - Melted butter makes the blondies fudgy and chewy.
    • Brown sugar - Keeps the blondies nice and moist.
    • Cornstarch - Keeps the texture of the blondies soft and chewy
    • Sprinkles - Use American-style rainbow sprinkles. These won't run in the batter.

    Directions For How To Make Funfetti Blondies

    1. Prepare.

      Preheat the oven to 350 and prepare an 8x8 pan with parchment paper. Set to the side.

    2. Make the blondie batter.

      In a large bowl, combine the melted butter, brown sugar, egg, and vanilla. Use a whisk to combine. Then, add in the flour, salt, and cornstarch. Use a rubber spatula to mix together the batter. Add in the sprinkles and white chocolate chips and mix to combine.

    3. Bake the blondies.

      Scoop the batter into the prepared pan. Top with extra white chocolate chips and sprinkles if desired. Bake the blondies for 20-25 minutes. Let the blondies cool on a rack for about 15 minutes.

    Serving Suggestions

    The better question when asking where to serve these funfetti blondies is where not to serve them. These funfetti blondies are great for all occasions, excellent for a school bake sale or after-dinner treat, and great on their own.

    Make Ahead and Storage

    While the blondies are best eaten fresh, they can easily be made a few days ahead of time. Make the blondies 1-2 days ahead and keep them in an airtight container. Store any extra blondies in an airtight container for 4-5 days. The blondies will also freeze very well. Store them in a plastic bag or airtight container in the freezer for 2-3 months.

    Tips and Variations

    • Bake Time - The blondies bake up really fast in the oven, so keep an eye out for them. When the edges start to pull away from the pan, they are close to being done.
    • Chocolate chips - Adding the white chocolate chips is optional but adds a great flavor. Chocolate chips can also be subbed in if you'd rather have those.
    • Sprinkles - This recipe allows you to customize the sprinkle color for a special occasion. Use green and red sprinkles for Christmas, red and pink for Valentine's Day, and orange and black for Halloween.

    • 1 ¼ cups brown sugar

    Instructions
